Lime Fluff

This is one that my step mom loves.

Ingredients:

  • 2 (3 oz.) pkgs. lime gelatin
  • juice of 1/2 lemon
  • 1 cup sugar
  • 2 1/2 cups water
  • 1 glass jar pimento cheese
  • 2 cans evaporated milk
  • 2 small pkgs. Lorna Doone cookies (Or can use plain old vanilla wafers, if you wish)

Directions:

Bring water and sugar to boil. Dissolve gelatin in this boiling water. Stir until dissolved. Cool until it starts to set. Whip the evaporated milk that has been chilled overnight, until fluffy. Add lemon juice to the milk as it is being whipped. Fold the neatly set gelatin into the whipped milk. Layer crumbs and gelatin mixture starting and ending with crumbs.

Add along with evaporated milk and lemon juice. Also, the cookies need to be crushed into crumbs.
