Sauerkraut Salad

Great as a salad, fun on a hot dog, with mustard or as a side dish to pork or any meat.


  • 1 16 oz. can sauerkraut drained and rinsed well.
  • Ad
  • 1 2 oz. jar pimiento, drained and cut into strips.
  • 1 large onion in rings (I use both white and red onions.)
  • 2 Tbsp. dried bell pepper
  • 1/4 cup sugar
  • 2 Tbsp. vinegar
  • 2 Tbsp. water
  • 3 Tbsp. oil


Blend oil, water, vinegar, and sugar. Arrange sauerkraut, peppers, and pimento in a bowl. Place onion rings on top. Pour dressing over.

Cover, refrigerate for several hours or overnight. Keeps for weeks.
