Summer Tomato Pie

Since this is "Tomato" week at Thrifty Fun, I thought I'd submit an unusual and delicious dish using tomatoes as the main ingredient.

Ingredients

  • 2 pie crusts (I like the Pillsbury refrigerated ones)
  • 4-6 ripe tomatoes, peeled and thickly sliced
  • 1 tsp. salt
  • 1 tsp. freshly ground pepper

  • 2 Tbs. chopped fresh basil (1 Tbsp. if dried)
  • 1 cup sharp cheddar cheese--grated
  • 1 cup mayonnaise

Directions

  1. Line a nine-inch pie plate with pastry.
  2. Cover with layers of sliced tomatoes.
  3. Sprinkle with salt, pepper, and basil.
  4. Blend cheese and mayonnaise and spread over tomatoes.
  5. Cover with top pie crust.
  6. Bake at 400 degrees F for 15 minutes. Then reduce heat to 350 degrees F for 20 minutes or until crust is slightly brown.

Eat and enjoy--a summer must!

Sandy - I fixed your Tomato Pie for dinner last night. My husband and I loved it. Just fantastic. Had to keep an eye on my husband though - he thinks that "pie" should be served with a scoop of icecream on top! Will be making that one again, and sharing it with friends! Thanks (08/08/2008)
