Preheat oven to 350 degrees F. Prepare cupcake pan with papers. Spray each paper with non-stick spray inside the papers.
Mix by hand spice cake mix, pumpkin, and water. Stir until well mixed. Mixture is much heavier than "normal" cupcakes. Spoon or scoop batter into prepared cupcake pans.
Bake for 20 minutes; let cool in pan for 5 minutes, then finish cooling on wire rack.
Frost with cream cheese frosting, regular vanilla frosting, or sprinkle powdered sugar on them.
Store in covered container. These are supposed to freeze well, but we've never had any last that long!
