Recipes for Lent?

Seeing that Lent is near and I don't eat meat on Friday's would you have any good ideas for fish, or non-meat meals.

I fix vegetable/spinach lasagna and veggie pizza a few times during lent. I use shredded summer and zuchinni squash, mushrooms, onions, peppers and whatever veggies you like. I use these vegetables in both with the spaghetti sauce in the lasagna and pizza sauce on the pizza. You can pretty much use your imagination....it's your pizza and lasagna. Top both with lots of cheese! Then of course, there is the salmon patties and the stand-by tuna noodle cassserole. Another good dinner is a seafood (fake crab or lobster meat) pasta salad served with homemade rolls or biscuits. I'll bet if you did a search for vegetarian meals you would come up with lots of new ideas. Try recipeszaar.com and allrecipes.com.

Layer lasagna noodles, cooked spinach, canned pink salmon (deboned and skinned) and jarred Alfredo sauce. Bake until bubbly. It's terrific!

And old recipe my dad use to make. Get a head of cabbage shred, dice however you would like your cabbage. Slice some onion. Put into a dutch over or large frying pan with a good amount of butter, margarine some salt and pepper. Saute, until the cabbage is well cooked. While that is going on boil some egg noodles or again what you prefer I think egg noodles are the best with this.

When the cabbage and onions are sauted well add the noodles let cook together on a low flame for about 10, 15 minutes and Serve. TIP: other variations when not Lent add some cooked bacon, smoked kielbasa or some pieces of ham.

Someone once told me about a great Greek cookbook that turned out to be surprisingly appropriate for Lent. I no longer recall the title but it was put out by a church or charity sisterhood type of fundraiser publication.
So you might want to check out this section of your bookstore or library.

We eat fish several times a week for the Omega 3 that is beneficial for lowering cholesterol. Our favorite is Talapia that I fix on my George Forman type grill. Tilapia comes frozen...each in a separate sealed package. They are available in most any supermarket but are cheaper to buy at Sam's Club. A 3 pound package has about 12 filets. Price is about $11.00 Quick to fix, because you can put them in warm water still sealed in their individual package and they will thaw in about 5 minutes.

Remove from the package, pat dry with a paper towel. Spray one side with olive oil, Place on grill oiled side down. Spray olive oil on the other side,sprinkle a little lemon pepper, a little garlic salt and a little dillweed on and grill about 5 minutes. Truly delicious and nutritious

My husband's Italian family always ate spaghetti with boiled eggs. At first that sounded awful to me, but it doesn't taste too bad actually. Just make spaghetti with jarred sauce (no meat) and slice boiled eggs on top or just set them on top. It's actually pretty good and very easy. Also, my favorite lenten meal has always been the old standby grilled cheese and tomato soup. When I was a child Lent was the only time we could have that for dinner and I loved it!

Growing up Catholic, my favorite meal after being so tired of fish sticks, macaroni and cheese, etc. was when my mom would fry up some potatoes and then add scambled eggs mix of eggs milk and seasonings. Sometimes we had a simple salad with it. Sometimes toast or just some bread and butter. In our age of everything needing to be quick, I use canned sliced potatoes to make cooking time quicker and you find them on sale all the time. It just warms my heart to think of that meal.

Here are a few of my favorite non-meat treats:
(1) A massive tossed salad with various peppers, olives, onions, tomatoes, etc. topped with flaked red sockeye salmon and Kraft Catalina dressing;

(2) same salad except skip the fish, use various cheeses and top with killer bleu cheese dressing (Recipe: Mix 1 cup crumbled blue cheese, 2 cups mayo, 1/4 cup vinegar, 2 Tablespoons sugar, 1/2 cup sour cream, 1 clove garlic, minced. Beat well and chill, ideally overnight.)
(3) Grilled cheese and tomato sandwiches: put mayo on two slices of bread, slice and place sharp or extra sharp cheddar on the mayo side of one bread slice, slice tomatoes and cover cheese with tomato slices, sprinkle liberally with garlic powder and freshly ground black pepper, cap with other bread slice, and grill on cast iron griddle or skillet in butter, turning once, until cheese is melted.
(4) Cream cheese and olive sandwiches: Mix chopped stuffed green olives, cream cheese, and enough mayo to reach a spreadable consistency. I usually mix in a little Tabasco and a dash of garlic powder. Then spread a big gob of it in a pita roll. Some folks add lettuce and tomato but I don't care for that myself. And my all-time favorite: red beans (pinto, october, kidney, etc), collard greens with stewed tomato sauce, and cornbread. The biggest trick to this is the tomato sauce. Just put two cans of stewed tomatoes, chopped up, 1/2 cup of sugar, 1 stick of butter (not oleo... yuck!), a good dose of crushed hot red pepper, and salt to taste. Simmer this for a long time, stirring now and then, until it develops a sauce-like consistency. I love this veggie group and cornbread to accompany pork, but it's so good and filling you won't even miss the meat. (If you wish you can season the beans and greens with butter or Crisco, or olive oil.)
