I am considering stainless steel kitchen appliances. I have honey oak cabinets. Must the stainless changes be made to all hardware, such as pulls, hinges, overhead lighting, etc.?

Not if you don't want to. As long as you try to blend the finish so it's close, go with a satin nickel or brushed chrome and you'll be fine.
I personally like a "mixed" look. Depending on what type of hardware you already have it may look just fine with the stainless. It's really about personal taste and finding possibly one or two items that make things look "blended"
