Cinnamon Brunch Cake
- 2 cup flour + 1/3 cup flour
- 2 cup brown sugar
- 1 stick margarine or butter
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1 tsp. salt
- 1 cup buttermilk
- 1 tsp. vanilla
- 1 egg (slightly beaten)
Blend together until finely mixed: 2 cup all purpose flour, 2 cup brown sugar, and stick of margarine. Reserve 3/4 cup crumb mixture for topping. Add balance of flour mixed with soda, salt, and cinnamon. Add buttermilk, vanilla, and egg; do not over mix. Place in buttered 9x13 inch pan; sprinkle on topping. Bake at 350 degrees for 30 minutes. Optional: May add either, 1 cup chocolate chips or 1 cup raisins or 1 cup chopped nuts.
