Lightning Fast Chicken Salad
- 2 12.5 oz canned chicken
- 3/4 cup chopped walnuts
- 1 cup red grapes
- 1/4-1/2 cup mayo
- 1/2 tsp. sugar
Drain chicken in colander and rinse well. In a large bowl, mix chicken, walnuts, mayo and sugar. Stir well! Slice grapes in halves and add to mixture. Stir to mix grapes. Add more mayo to make the consistency you like. Serve chilled with your favorite cracker or make into a sandwich.

This is also good using leftover fried chicken instead of the canned. If you have a couple of extra pieces left in a 'bucket', just debone the meat and chop it as coarse of fine as you like. Add the other ingredients and you have a quick fried chicken salad. The extra crispy bits in the bottom of the bucket can be added for even more flavor.

What brand name chicken was used? I bought some from sam's club & it was too tough & stringy. I like the recipe.
