Apple Pie

Ingredients:

  • 3 cooking apples
  • 1 egg yolk*
  • 1/2 tsp. lemon juice
  • 1 tsp. brown sugar
  • 1 tsp. water or apple juice
  • small pinch of ground cinnamon
*For babies age 6 months to 10 months, omit egg and add infant cereal by 1 tablespoon, until you get the desired consistency.

Directions:

Peel, core, and dice the apple into small pieces. Add to the lemon juice and water, cook over medium heat in a small saucepan for 20 minutes or until soft.

Mash or puree to desired consistency. Beat in the egg yolk and sugar until smooth.

Bake at 350 degrees F for 15 minutes or until set. Cool before serving.

This is interesting, for adults I guess it's because it's more an applesauce pie than the apple pie I'm used to, but I think I'll try it with a gingersnap crust and I guess I'll see what quantity it makes. Maybe whipped cream with cinnamon or just leave it as ginger crust with apples//maybe some crystallized ginger. I never thought of putting egg yolk in applesauce to firm it up. Thanks.

Recipe: Apple Pie

Ingredients

  • 4 cups peeled sliced apples
  • 1 cup sugar
  • 3 Tbsp. flour
  • 1/2 tsp. nutmeg
  • 1/3 cup orange juice
  • 1/3 cup melted butter
  • 2 unbaked pie shells

Directions

Combine apples with remaining ingredients except pie shells in large bowl, tossing lightly to mix well. Pour into 1 pie shell. Top pie with top crust or strips of pastry as desired, sprinkling lightly with sugar. Bake at 450 degrees F for 15 minutes. Reduce temperature to 325 degrees F and bake for 45 minutes longer.
