Mock Apple Butter
- 4 cups pureed zucchini
- 4 Tbsp. white vinegar
- 1 Tbsp. lemon juice
- 2 cups sugar
- 1 tsp. cinnamon
- 1/4 tsp. ground cloves
- 5-6 drops red food coloring
Peel and seed zucchini and puree in blender. Pour into saucepan. Add vinegar and lemon juice. Stir in sugar, cinnamon, ground cloves and the red food coloring. Cook down to desired thickness. Jar and seal. Do not use paraffin wax to seal.
