Recipes Using Pine Nuts in Cookies

I would think almost any of your favourite cookies that you normally put other nuts in could have pine nuts in them instead. As for hard biscuits, have you ever made biscotti? These are very hard and perfect for dunking in coffee or tea.

Biscotti with Almonds

1/2 c. whole almonds, toasted(this is where I would use the pine nuts instead, you wouldn't even have to chop them.)
1/3 c. butter, sofened
3/4 c. sugar
2 eggs
1-1/2 tsp anise seed(this is optional, I usually don't use it)
3/4 tsp almond extract( I would use vanilla with the pine nuts)
1/2 tsp orange zest
2-1/4 c. flour
1-1/4 tsp baking powder
1/4 tsp salt
Chop almonds(or pine nuts); set aside. Whisk togethr butter and sugar until fluffy; beat in eggs. Stir in next 3 ingredients. In seperate bowl, combine flour, baking powder and salt. Stir into butter mixture; add almonds(or pine nuts) On floured boad, roll the dough into two ropes. Place on ungreased baking sheet; bake at 325*F for 25 minutes. Remove from baking sheet; let cool 5 minutes. Slice diagonally into 1/2" slices. Lay flat on baking sheet and bake 10 minutes, turning slices halfway through baking. MAKES 35 BISCOTTI
