Mild Salsa

For some time I looked for an easy salsa recipe that wasn't too hot, and this is what I had in mind. People always ask me for this recipe.

Ingredients:

  • 5 cup ripe tomatoes chopped, do not peel or seed. (you can also use canned diced tomatoes)
  • 1 large onion, chopped
  • 2 large green peppers, chopped
  • 2 or 3 large cloves of garlic, finely chopped
  • 1 5 1/2 oz. can tomato paste
  • 3/4 cup white vinegar
  • 1/4 cup brown sugar
  • 1 Tbsp. pickling salt
  • 2 tsp. paprika
  • 1/4 tsp. cayenne pepper

Directions:

Mix ingredients in pot, bring to a boil and simmer for one hour. Place in jars. If too thin add 1 t. corn starch.

Servings: 4 pints
Time:15 to 20 minutes Minutes Preparation Time
1 hour Minutes Cooking Time

Ingredients:
  • 3 fresh tomatoes, peeled, seeded and finely chopped
  • 1/2 cup minced fresh cilantro
  • 2 to 3 garlic cloves, minced
  • 1 can (4 ounces) chopped green chilies
  • 1/2 cup sliced green onions
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
Directions:

In a large bowl, combine all ingredients. Chill before serving. Yield: 3 cups (07/11/2008)

I make 2 different kinds.

Blender Salsa

  • 2 Cans tomatoes (16oz)
  • 3 green onion chopped
  • 2 cloves garlic minced
  • 1 lime juiced
  • Cilantro to taste (I like a lot so I use a bunch not a lot, but a bunch)
  • fresh jalepeno (canned/jarred can be used) cut in half and take out all seeds the heat is in
  • the seeds (I like a few seeds, but I like the heat)
Put everything in the blender and whirl until smooth.

Pico De Gallo

  • 4 large tomatoes (I use fresh for this) chopped into small pieces
  • 1 yellow onion
  • 2 cloves garlic minced
  • 1 lime juiced
  • Cilantro to taste (I like a lot so I use a bunch not a lot, but a bunch)
  • fresh jalepeno (canned/jarred can be used) cut in half and take out all seeds the heat is in the seeds (I like a few seeds, but I like the heat)
In a large bowl place the chopped tomatoes. In a food processor place remaining ingredients. Whirl until finely chopped mix in with tomatoes. Cover and refrigerate several hours or overnight for the flavors to blend. (07/11/2008)

  • Red tomatoe salsa
  • 5-6 fresh roma tomatoes
  • sm red onion diced finely
  • sm can of green diced chiles
  • bunch of cilantro chopped
  • dash of salt and pepper
  • 1 garlic glove finely minced
Refrigerate for about 30 minutes. Green Tomatillo Salsa
  • 10 tomatillos (they are green and have a paper-like skin)
  • sm can of green diced chiles
  • 3 arbol chiles
  • sm red onion diced finely
  • bunch of cilanto chopped
  • dash of salt and pepper
  • 1 garlic glove finely minced
Peel the outer paper like skin off the tomatillos. Rinse them off. Toast the tomatillos and arbol pepper. You can do this on the stove or toaster oven. You need to watch carefully so you don't burn them. Place in a blender. Mix with the above ingredients and refrigerate for 30 minutes or so.

I usually serve with chips and crackers of choice.

* I like to add an avocado and/or shrimp with a dash of lemon juice. A few squeezes. Yummy! But my family prefers without them.(07/13/2008)

I don't have a recipe, but do everything to taste. 4 cans petite cut diced tomatoes, drain off as much juice as you can
  • Half a mild onion, diced (if the onion seems strong, soak it in water for an hour then drain. Strong onions can overpower as well as make the salsa too spicy.)
  • 1 or 2 cloves of garlic, minced (again, strong raw garlic adds spice so you may want to use less rather than more.)
  • 1 large bunch of cilantro, chopped
  • lime juice, 2 or three tablespoons. Put it in the fridge to let the flavors blend for at least an hour. Depending on taste, you can add more of specific ingredients. (07/14/2008)
