Best Toffee Cookies

Easy great cookie!

  • 1 yellow cake mix
  • 1 egg
  • 2/3 cup vegetable oil
  • 1 bag heath chips

Stir all together (will be thick). Form into balls about the size of a walnut. Flatten into small rounds. Place on ungreased cookie sheet. Bake 350 degrees F. for 8-10 minutes.

Yummy. Crisp the first day, chewy the second! (If they last that long!)

  • 3/4 cup butter (not margarine)
  • 1 egg
  • 1 tsp. vanilla
  • 2 cups flour
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. soda
  • 1/2 cup toffee bits

Mix softened butter and sugar together until fluffy, add egg and vanilla, mix together. Sift flour, baking powder and soda together then add to creamed mixture. Stir in toffee bits.

Roll walnut-sized balls in hand and then roll in sugar. Place on cookie sheet. Flatten slightly.

Bake in 350 degree F oven for 8-10 minutes, being careful to not overcook. Place on cooling rack. These should be soft and chewy!
