Mom's Soft Raisin Cookies

Ingredients

  • 1 cup water
  • 2 cups raisins
  • 1 cup shortening
  • 1 3/4 cups sugar
  • 2 eggs, beaten
  • 1 tsp. vanilla extract
  • 3 1/2 cups flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/2 cup chopped walnuts

Directions

Combine raisins and water in a small saucepan; bring to a boil. Cook for 3 minutes; remove from heat and let cool. (Do not drain). In a mixing bowl, cream shortening; gradually add sugar. Add eggs and vanilla. Combine dry ingredients; gradually add to creamed mixture and blend thoroughly. Stir in nuts and raisins. Drop by teaspoonfuls 2 inches apart on greased baking sheets. Bake at 350 degrees F for 12-14 minutes. Yield: About 6 dozen.
