Green Pepper and Tomato Salad

This is a quick and delicious summer salad, chop a large green pepper and two medium size tomatoes into bite size pieces. Place the pieces into a bowl, toss to combine, and sprinkle with Italian salad dressing. Allow to sit for a bit so the tomato juices will mix with the salad dressing, and it's ready to eat. Can also be stored in a covered container in the refrigerator.

Tomato, Bell Pepper and Cilantro Salad

For a flavor change of pace substitute the cilantro with fresh basil, celery leaves, oregano or parsley.

Ingredients:

  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 Tbsp. sugar
  • 1 Tbsp. minced garlic
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 4 large room temperature ripe tomatoes, cut into bite sized pieces
  • 1 large green bell pepper, cut into bite sized pieces
  • 2 large green onions, sliced
  • 1/4 cup fresh cilantro, chopped

Directions:

Whisk together olive oil, vinegar, sugar, garlic, salt, and pepper in a large bowl. Add tomatoes, bell pepper, green onions and cilantro, gently toss until evenly coated and serve.

Ingredients

  • 3 medium tomatoes, seeded and chopped
  • 1 medium green pepper, chopped
  • 1 celery rib, thinly sliced
  • 1/2 cup chopped red onion
  • 2 Tbsp.. cider vinegar
  • 1 Tbsp. sugar
  • 1/2 tsp. salt
  • 1/8 tsp. pepper

Directions

In a large bowl, combine the tomatoes, green pepper, celery and onion. In a small bowl, combine the vinegar, sugar, salt and pepper. Stir into tomato mixture. Cover and refrigerate for at least 2 hours, stirring several times. Serve with a slotted spoon.

Hi, this is Kat from PA. What you wrote is excellent! I go a tad over on the olive oil, but you rock! Also, not sure if your into cabbage. I never really was, but if you get a head, cut it any way you want. Add salt, pepper, olive oil and a smidge of vinegar. It's great! Thank you for posting this! (03/11/2009)
