Zucchini Beef Bake

Ingredients

  • 4 small zucchini
  • 1 cup chopped onion
  • 1/4 tsp. crushed dried thyme and/or oregano
  • 1/8 tsp. pepper
  • 1 1/2 cups buttered bread crumbs
  • 1 1/2 lb. ground beef
  • 3/4 tsp. salt
  • 1 tsp. margarine
Sauce:
  • 4 Tbsp. margarine
  • 1/2 tsp. salt
  • 3/4 cup sharp cheddar cheese, shredded
  • 1/4 cup flour
  • 2 cups milk

Directions

Cook zucchini 5 minutes; brown beef; add onions and spices. Melt margarine; blend in flour, salt and mix. Cook until it thickens and bubbles. Add cheese, stirring until blended. Stir in meat mixture and zucchini. Put in casserole and sprinkle buttered bread crumbs on top of casserole. Bake 35 minutes at 350 degrees F or until heated through. This can be frozen or divided into half and bake one small one; then freeze the other half to bake later.

This would be great for vegetarians. Just omit the beef, or use tvp crumbles.
