Sweet Potato Bread

Ingredients

  • 2 cups self-rising flour
  • 1 cup sugar
  • 1/4 cup oil
  • 2 eggs
  • 1 cup cooked, mashed sweet potatoes
  • 1/2 tsp. allspice
  • 1/2 cup milk
  • 1 cup chopped pecans

Directions

Combine all ingredients except pecans in large mixer bowl. Beat at low speed for 30 seconds and medium speed for 2 minutes. Stir in pecans. Pour into greased loaf pan. Bake at 350 degrees F for 50-60 minutes or until loaf tests done. Cool for 10 minutes before removing from pan.

Recipe: Sweet Potato Bread

Ingredients

  • 1 cup margarine, softened
  • 3 cup sugar
  • 3 eggs
  • 1 tsp. vanilla
  • 2 cup baked sweet potatoes, mashed
  • 3 cup all purpose flour
  • 1 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1 1/2 tsp. cinnamon
  • 1 tsp. ground cloves
  • 1/2 tsp. nutmeg

Directions

Preheat oven to 350 degrees. In a large bowl, cream margarine, add sugar. Beat in eggs and vanilla. Add potatoes. In a medium sized bowl, sift together: flour, salt, baking soda, and spices. Blend with potato mixture. You may add 1 cup chopped pecans and 1 cup raisins or 1 cup Bran Buds cereal and 1/2 cup chopped dates. Bake in 2 greased and floured loaf pans. Bake for 60-65 minutes. Let cool for 10 minutes before trying to remove from pan. Remove and cool on racks. Wrap well. It's better the next day. Makes 2 loaves.

Ingredients

  • 2 cups sifted flour
  • 3/4 cup sugar
  • 1 Tbsp. baking powder
  • 1 tsp. salt
  • 1/4 tsp. mace
  • 1/2 cup chopped nuts
  • 2 eggs, beaten
  • 1 cup mashed, cooked sweet potatoes
  • 1/4 tsp. butter flavoring
  • 1/4 tsp. black walnut flavoring
  • 1 tsp. burnt sugar
  • flavoring
  • 1/2 cup milk
  • 3 Tbsp. melted shortening or oil

Directions

Sift together the flour, sugar, baking powder, salt and mace into mixing bowl. Stir in the chopped nuts. Blend together the eggs, sweet potatoes, flavorings, milk and melted shortening. Add this mixture all at once to the flour mixture, stirring until blended. Turn into a loaf pan which has been well greased and bake at 350 degree F for about 1 hour and 10 minutes or until done. Cool in the pan for 10 minutes before removing from the pan. This is exceptionally good!
