Ingredients
- Streusel Topping
- 2 1/2 cups flour
- 1 1/2 cups sugar
- 1 Tbsp. pumpkin pie spice
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/4 tsp. baking soda
- 2 beaten eggs
- 1 cup canned pumpkin
- 1/2 cup oil
- 3/4 cup milk
- 1 1/2 cups peeled, chopped tart apple
Directions
Grease 22 muffin cups or line with paper bake cups; set aside. Prepare streusel topping; set aside. Combine flour, sugar, pumpkin pie spice, baking powder, salt and soda. Combine eggs, pumpkin, oil and milk. Add all at once to dry ingredients. Stir just till moistened; fold in apple. Spoon into prepared muffin cups; fill 3/4 full. Sprinkle Streusel topping on muffins. Bake in a 375 degrees F oven for 20-25 minutes. Cool in pans on wire rack 5 minutes. Remove from pan; serve warm. Makes 20-22.

- 3/4 tsp. pumpkin pie spice;
cut in
- 2 Tbsp. margarine or butter
Mix until crumbly.
