Pumpkin Apple Streusel Muffins

Ingredients

  • 2 1/2 cups flour
  • 1 1/2 cups sugar
  • 1 Tbsp. pumpkin pie spice
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. baking soda
  • 2 beaten eggs
  • 1 cup canned pumpkin
  • 1/2 cup oil
  • 3/4 cup milk
  • 1 1/2 cups peeled, chopped tart apple

Streusel Topping

  • 3 Tbsp. flour
  • 1/3 cup sugar
  • 3/4 tsp. pumpkin pie spice
  • 2 Tbsp. margarine or butter

Directions

Grease 22 muffin cups or line with paper bake cups; set aside. Prepare streusel topping, and set aside. Combine flour, sugar, pumpkin pie spice, baking powder, salt and soda. Combine eggs, pumpkin, oil and milk. Add all at once to dry ingredients. Stir just till moistened, and fold in apple. Spoon into prepared muffin cups to 3/4 full.

For topping: Combine dry ingredients and cut in butter. Mix until crumbly.

Sprinkle Streusel topping on muffins. Bake in a 375 degrees F oven for 20-25 minutes. Cool in pans on wire rack 5 minutes. Remove from pan, and serve warm. Makes 20-22.
