What apple is best to make apple butter?

It's easier to use canned apple sauce instead of apples. And its probably cheaper also.

I use Jonagolds or any type sweet apple therefore I don't have to use but a little sugar. I only used 1 cup of sugar to 16 cups of sauce and it was plenty sweet. My recipe is:
16 cups homemade sauce
1 cup splenda brown sugar or 2 cups reg. brown sugar
1 20-oz. can crushed pineapple in its own juice
2 tblsp. cinnamon

Put ingredients in a roaster and bake at 350 until thick stirring every half hour. Put in sterilized pint jars and process by water bath. Makes 5-6 pints. When I give this for gifts everyone raves at the flavor.
