Sausage Casserole

Ingredients:

  • 1 lb. sausage
  • 1 med. onion, chopped
  • 2 Tbsp. flour
  • 1/2 tsp. salt
  • 1 1/2 cups milk
  • 1 pkg. macaroni (8oz.), cooked and drained
  • 2 cups shredded cheddar cheese

Directions:

Brown sausage and onion in skillet. Pour off drippings. Add milk. Cook over low heat, stirring constantly, until thickened. Stir in macaroni and 1 cup cheese. Spoon mixture into lightly greased casserole dish. Sprinkle remaining cheese on top. Bake at 400 degrees F for 25-30 minutes.

Recipe: Sausage Casserole

Ingredients

  • 1 1/2 lb. lean pork sausage
  • 4-5 green onions, chopped
  • 1 med. bunch celery, including leaves, chopped
  • 1 large green pepper, chopped
  • salt and pepper, to taste
  • 2 pkgs. dry chicken noodle soup mix
  • 4 1/2 cups boiling water
  • 1 cup raw brown rice
  • 1 can sliced water chestnuts, drained (8 oz.)
  • 1/4 cup slivered almonds

Directions

In large, heavy skillet, cook sausage, stirring until crumbled. Remove from the fat and reserve. Pour off all but 2-3 tablespoons of fat. Saute' onions, celery and green pepper, seasoning to taste. In saucepan, cook chicken noodle soup in boiling water for 7 minutes.

Add brown rice and water chestnuts. Remove from heat and add sausage and sauteed veggies. Turn mixture into large casserole dish. Sprinkle with almonds and cover. Bake in 350 degree F. oven 1 1/2 - 2 hours. Remove cover for last 30 minutes of baking time.

Recipe: Sausage Casserole

Ingredients:

  • 2 1/2 cups herb croutons
  • 2 cups shredded American cheese
  • 1 lb. hot Jimmy Dean sausage
  • 1 lb. medium Jimmy Dean sausage
  • 4 eggs
  • 3/4 tsp. dry mustard
  • 2 1/2 cups + 1/2 cup milk
  • 1 can chopped green chilies (opt.)
  • 1 can mushroom soup

Directions

Spread 2 1/2 cups herb croutons in bottom of 9x13 inch pan. Use enough to cover bottom of pan. Top with 2 cups shredded American cheese. Brown and drain 2 pounds sausage; spread on top of cheese. Beat 4 eggs. Add 3/4 teaspoon dry mustard and 2 1/2 cups milk (and 1 small can chopped green chilies, opt.). Pour egg mixture over casserole and refrigerate overnight. Before baking, dilute 1 can mushroom soup with 1/2 cup milk and pour over all. Bake at 300 degrees F for 1 1/2 hours; do not overbake. Serve immediately.
