I like to think of this as a fun way to dress up macaroni and cheese. Very good!

Ingredients:

  • 1 pkg. macaroni and cheese
  • 1 lb. smoked sausage, cut in chunks
  • 2 cups broccoli florets
  • 1/2 cup red or green pepper strips
  • 2 Tbsp. green onions
  • 1/2 tsp. oregano leaves

Directions:

Prepare macaroni and cheese as directed on package. Cook sausage 6 minutes over medium heat. Add veggies and oregano, continue cooking until veggies are tender. Add macaroni and cheese; mix lightly.

Servings: 4-6
Prep Time: 15 Minutes
Cooking Time: about 15 Minutes

Egg and Sausage Casserole I

Ingredients

  • 8 slices of bread, crumbled
  • 2 lb. sausage, browned and drained
  • 2 cups cubed American cheese

  • 4 eggs, beaten
  • 2 1/2 cups milk
  • 3/4 tsp. prepared mustard
  • 1 cup cream of mushroom soup
  • 1/2 cup milk

Directions

Place bread crumbs in greased 9x13 inch pan. Sprinkle with cheese. Add browned sausage. Blend eggs, 2 1/2 cups milk and mustard. Pour over ingredients in pan. Refrigerate several hours or overnight. Blend soup and 1/2 cup milk. Pour over egg mixture in pan and bake at 350 degrees F for 3/4 hour. Cover while baking.

Egg and Sausage Casserole II

Ingredients

  • 1 lb. bulk sausage
  • 1 tsp. dry mustard
  • 2 slices bread, cubed (cut crust off bread)
  • 1 cup Cheddar cheese
  • 2 cups milk
  • 1 tsp. salt (opt.)

Directions

Fry and drain sausage. Mix remaining ingredients together. Place in glass dish. Bake 45 minutes at 350 degrees F.

Ingredients

  • 1 1/2 lb. lean pork sausage
  • 4-5 green onions, chopped
  • 1 med. bunch celery, including leaves, chopped
  • 1 large green pepper, chopped

  • salt and pepper, to taste
  • 2 pkgs. dry chicken noodle soup mix
  • 4 1/2 cups boiling water
  • 1 cup raw brown rice
  • 1 can sliced water chestnuts, drained (8 oz.)
  • 1/4 cup slivered almonds

Directions

In large, heavy skillet, cook sausage, stirring until crumbled. Remove from the fat and reserve. Pour off all but 2-3 tablespoons of fat. Saute' onions, celery and green pepper, seasoning to taste. In saucepan, cook chicken noodle soup in boiling water for 7 minutes.

Add brown rice and water chestnuts. Remove from heat and add sausage and sauteed veggies. Turn mixture into large casserole dish. Sprinkle with almonds and cover. Bake in 350 degree F. oven 1 1/2 - 2 hours. Remove cover for last 30 minutes of baking time.

Ingredients:

  • 2 1/2 cups herb croutons
  • 2 cups shredded American cheese
  • 1 lb. hot Jimmy Dean sausage
  • 1 lb. medium Jimmy Dean sausage

  • 3/4 tsp. dry mustard
  • 2 1/2 cups + 1/2 cup milk
  • 1 can chopped green chilies (opt.)
  • 1 can mushroom soup

Directions

Spread 2 1/2 cups herb croutons in bottom of 9x13 inch pan. Use enough to cover bottom of pan. Top with 2 cups shredded American cheese. Brown and drain 2 pounds sausage; spread on top of cheese. Beat 4 eggs. Add 3/4 teaspoon dry mustard and 2 1/2 cups milk (and 1 small can chopped green chilies, opt.). Pour egg mixture over casserole and refrigerate overnight. Before baking, dilute 1 can mushroom soup with 1/2 cup milk and pour over all. Bake at 300 degrees F for 1 1/2 hours; do not overbake. Serve immediately.

Ingredients

  • 1 lb. pork sausage
  • 1 1/2 cup celery
  • 1/2 cup onion
  • 1 pkg. dry chicken soup mix
  • 1 can cream of mushroom soup
  • 3 1/2 cups boiling water

  • 1 cup uncooked rice

Directions

Brown pork sausage; drain all but 2 tablespoons fat. Saute' celery and onion in fat. Combine soups and water. Pour over rice. Combine all ingredients in 2 quart casserole. Bake at 350 degrees F for 45 minutes. Remove cover during the last 10 minutes.

Brown sausage, add salt and pepper to taste, add more sage if desired. Drain and set aside. Bring 3 cups of water to boil, add the rice, and the two envelopes of soup mix and simmer for 5 minutes.
