Sausage Casserole Recipes

I like to think of this as a fun way to dress up macaroni and cheese. Very good!

Ingredients:

  • 1 pkg. macaroni and cheese
  • 1 lb. smoked sausage, cut in chunks
  • Advertisement

  • 2 cups broccoli florets
  • 1/2 cup red or green pepper strips
  • 2 Tbsp. green onions
  • 1/2 tsp. oregano leaves

Directions:

Prepare macaroni and cheese as directed on package. Cook sausage 6 minutes over medium heat. Add veggies and oregano, continue cooking until veggies are tender. Add macaroni and cheese; mix lightly.

Servings: 4-6
Prep Time: 15 Minutes
Cooking Time: about 15 Minutes

Recipe for Egg and Sausage Casserole. Place bread crumbs in greased 9x13 inch pan. Sprinkle with cheese. Add browned sausage. Blend eggs, 2 1/2 cups milk and mustard. Pour over ingredients in pan. Refrigerate several hours or overnight.

In large, heavy skillet, cook sausage, stirring until crumbled. Remove from the fat and reserve. Pour off all but 2-3 tablespoons of fat. Saute' onions, celery and green pepper, seasoning to taste.
