Any tips for baking an evenly risen sponge cake?

Give it a 1/4 turn every 15 mins. in the oven for more even heating.

First make sure your mixing bowl is very clean, and also the baking pan. Don't stir, fold into the pan. Try not to shake as you put it in the oven. Hope this helps, I make sponge cake all the time. Bonnie
