Fruit Salad with Strawberry Dressing

  • 1/2 med. honeydew melon
  • 2 oranges
  • 2 Red Delicious apples
  • 2 avocados
  • 2 bananas
  • 1 Tbsp. lemon juice
  • 2 Tbsp. strawberry vinegar
  • Ad
  • 1 cup sour cream
  • Spinach greens
  • 1 cup dry-roasted cashew nuts, coarsely chopped
  • Grapes for garnish (Optional)


Cut melon into 12 slices and remove rind. Peel oranges and cut into thin round slices. Core and slice apples. Do not peel. Peel and slice avocados. Peel bananas and cut into chunks. Sprinkle lemon juice over apples, avocados, and bananas to prevent browning.

Arrange alternate layers of fruit on a bed of crisp spinach greens on individual plates. Garnish generously with cashews and a handful of grapes. Stir strawberry vinegar into sour cream. Drizzle over fruits and serve. Makes about 6 servings.
