Substituting Small for Large Eggs

When a recipe calls for eggs it usually means LARGE eggs. If you use small eggs, just add an extra one.

That reminds me of something I do-- I buy small or medium eggs when they are on sale. Then, when I want to halve a recipe that calls for 1 egg, I can use a small or medium egg instead of trying to halve a large egg.
