I found this recipe today so I have not tried it. Sounds interesting, I'm saving it to try.

"Magic Rolls"

2 cups warm milk
1 package dry yeast
1/3 cup oil
1/3 cup sugar
1 egg, beaten
4 cups self-rising flour

Beat all together with whisk beater. Mix well.
Cover tightly and keep in refrigerator as needed or
place in greased muffin pans, 2/3 full.
Let set for 15 minutes.
Bake at 425° for 15 minutes or until golden brown.
Will keep in refrigerator for 2 weeks or so.

I would guess you could do the same thing using a stand mixer as well.

Mother's Rolls

2 pkgs. dry yeast
2 c. lukewarm water
3/4 c. sugar
1 t. salt
6-7 c. flour
3 T. cooking oil
2 eggs

Dissolve yeast in water. Add sugar and salt; stir well. Mix in 2 cups flour. Add cooking oil and mix. Add 2 more cups flour and eggs. Mix well and beat 100 strokes. Mix in 2 more cups flour. Add up to 1 cup more flour to make dough right consistency. Cover and let rise 1 1/2 hours at room temperature. Put on floured board and knead 1 minute. Make out in rolls and place in greased pan. Cover with tea towel and let rise 2-3 hours or more until double in size. Bake at 375 - 400 for 10 minutes.

I have found the easiest way to make any kind of yeast bread is to use your bread machine and put in ingredients according to the order it says in instructions. For instance, mine says that I put in all liquid ingredients first. Then set it on 'DOUGH" cycle. That does half your work. Then you just need to shape the rolls and let rise again and bake.
