Quick Spinach Medley

Ingredients

  • 1 can whole leaf spinach (15oz.)
  • 3 slices bacon
  • 1 onion, cut in chunks
  • 1 can whole new potatoes, drained and quartered (16 oz)
  • 1/2 tsp. marjoram
  • 1/4 tsp. thyme

Directions

Drain spinach well, pressing out excess liquid. Cook bacon in skillet. Remove bacon; set aside. Saute' onion and potatoes in drippings. Stir in marjoram, thyme and spinach. Heat through. Crumble bacon; sprinkle over top.
