Fresh Stir-Fry Melange Recipe

Red and green pepper strips, ready for stir fry.

Ingredients

  • 3 1/2 cups fresh green pepper strips
  • 3 1/2 cups fresh red pepper strips
  • 2 1/2 cups sliced mushrooms
  • 1 cup sliced celery

  • 2 Tbsp. chopped fresh onion
  • 1/2 clove garlic, crushed
  • 1/2 tsp. sugar
  • 1/4 tsp. dried leaf oregano
  • 3/4 tsp. salt
  • dash pepper
  • 1/4 cup olives oil
  • 1 tsp. vinegar
  • 2 tomatoes, cut in wedges

Directions

Stir-fry first 10 ingredients in hot oil in skillet over medium-high heat until peppers are crisp-tender. Add vinegar and tomatoes. Cook until heated through.
