Ingredients
- 2/3 cup dried apricots
- 1/2 cup soft butter or margarine
- 1/4 cup granulated sugar
- 1 cup sifted flour
- 1/3 cup flour
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1 cup brown sugar
- 2 eggs, well beaten
- 1/2 tsp. vanilla
- 1/2 cup chopped nuts
- powdered sugar
Directions
Rinse apricots; cover with water. Boil 10 minutes; drain, cool and chop. Grease 8x8 inch pan. Mix butter, granulated sugar, and 1 cup flour till crumbly. Pack into pan. Bake 25 minutes at 350 degrees F until lightly browned. Sift together 1/3 cup flour, baking powder, and salt. Beat brown sugar into eggs. Add sifted flour mixture; mix well. Mix in vanilla, nuts and apricots. Spread over baked layer. Bake 30 minutes at 350 degrees F. Cool in pan; cut into squares. Roll in powdered sugar.
