Ham and Apricots

Ingredients:
  • 1 can apricot halves, undrained
  • 3/4 cup chicken broth
  • 1/3 cup sugar
  • 1/4 cup white vinegar
  • 3 Tbsp. soy sauce
  • 3 Tbsp. butter or margarine
  • 1 lb. cooked ham, cut into strips
  • 1 green pepper, cut into 1 inch pieces
  • 1/4 cup cornstarch
  • 1/4 cup chicken broth
  • Hot cooked rice

Directions:

Drain apricots, reserving juice; set apricots aside. Combine juice, 3/4 cup chicken broth, and next 4 ingredients in a large saucepan. Stir in ham and green pepper. Bring to a boil; cover, reduce heat, and simmer 10 minutes.. Combine cornstarch and 1/4 cup broth, stirring until smooth; add to ham mixture. Bring to a boil; cook 1 minute or until thickened, stirring constantly. Stir in apricots, and serve over rice.
