I am looking for information on the drying times needed to dehydrate fruits and vegetables.

Well, there are so many variables, especially times to when they are dried, like how you are drying them (outside, dehydrator, oven), is the weather humid, or dry. I do know that some of them have to be rubbery, and some will shatter when you hammer some of them, if they shatter, they are dry then.

Try in a search engine for typing dehydrating, fruit, vegetables and chart, this is one that came right up to me for those in the search engine. http://www.recipesource.com/misc/hints/00/rec0095.html
