Ham Rolls I

Ingredients

  • 2 lb. ground smoked ham
  • 1 1/2 lb. ground lean pork
  • 1 cup soda cracker crumbs
  • 1 cup milk
  • 2 eggs, beaten
  • 1/2 cup vinegar
  • 1 cup water
  • 1 1/2 cups brown sugar
  • 1 Tbsp. mustard

Directions

Ask butcher to grind ham and pork together ahead of time. Mix first 5 ingredients (I use pastry blender). Form in rolls about the size of large goose eggs. These shrink some in cooking. Cook about one hour in 350 oven. Mix together next four ingredients and boil five minutes in large pan. Pour over rolls after they have baked for an hour. Bake another 1 1/2 hours in this syrup. Turn them once while they are baking in this syrup. Note: Start making the syrup about 20 minutes before time to add it.

Ham Rolls II

Ingredients

  • 1 1/4 lbs. ground ham
  • 1/2 lb. ground beef
  • 1 lb. ground pork
  • 2 eggs
  • 1 cup milk
  • 1 1/2 cup crushed graham crackers
Sauce:
  • 1 can tomato soup
  • 1 cup brown sugar
  • 6 Tbsp. vinegar
  • 1/2 tsp. dry mustard

Directions

Combine meat mixture and ingredients; mix well. Form into 15 balls; place in baking dish. Cover with sauce after combining sauce ingredients. Bake for 1 hour at 350 degrees F.
