Ingredients
- 12 lb. whole turkey
- 2 lbs. bacon
- 4 cups ice cubes
- 2 tsp. Lawry's seasoning salt
- heavy-duty tinfoil
Directions
Place 7 layers of aluminum foil on a large surface. Spread out 1 lb. bacon on foil. Place turkey on top. Sprinkle with seasoning salt. Drape the other 1 lb. of bacon over turkey. Fill turkey cavity with ice cubes. Cover with 7 more layers of aluminum foil. Wrap completely tight; place in a large roaster with 1 cup water. Roast slowly in oven at 200 degrees F for 8 hours, then turn temp up to 300 degrees F for a few more hours or until done. This works great to pop in the oven the evening before Thanksgiving, and wake up to the wonderful aroma of turkey. Keep checking for doneness after 8 hours and adjust oven temp accordingly. This can also be done in a fire pit in a bed of coals and completely covered with coals then enclosed with dirt. Leave in coals overnight; ice cubes and the foil keep the moisture in. Wonderful smoked flavor!
