Easy and Inexpensive Pizza Casserole

This was always my Mom's favorite quick supper. She was a teacher who often didn't have a lot of time after school to plan a meal for the five of us. We all loved it! It is a quick and easy supper for 4-5 people. It requires only 4 ingredients and they are staples that almost everyone always has on hand. It "seasons" itself and really does taste like pizza. Serve with a tossed salad for a healthy full meal!

Ingredients

  • 1 1/2 Lb. Hamburger
  • 1-2 sleeves Saltines
  • 2 cans Tomato Soup
  • 24 slices Cheese

Directions

Brown hamburger. In square pan layer in following order; 1/4 hamburger, cover with saltines, cover with sliced cheese, cover with 1/2 can tomato soup (undiluted. Repeat layers ending with tomato soup. Bake in 350 degree oven for 30 minutes . Let sit for 5 minutes. Cut in squares and serve.

Pizza Casserole VIII

Here is a great recipe that I used for when company comes over and on my daughters birthday. It is called Pizza Casserole I found it in a newsletter we get from this Christian organization.

Ingredients

  • 2 lbs. hamburger (I sometimes use ground chicken or ground pork)
  • 1 onion
  • 1 can tomato soup
  • 1 jar pizza sauce
  • 1 egg
  • 1/2 cup milk
  • 1 7 oz. macaroni
  • 1 Tbsp. sugar
  • 1 small bag sharp cheddar cheese
  • 1 large bag mozzarella cheese

Directions

Brown hamburger and onion. Drain. Add pizza sauce, tomato soup and sugar. Let simmer for 10 minutes while the macaroni is cooking. Drain the macaroni and put in bottom of pan (13x9 inch and spray the pan for easy clean up)

Beat egg, and then mix it with the milk. Pour over the macaroni and mix well. Spread evenly over the bottom of the pan again. Pour the meat sauce over the macaroni and spread evenly. Do not mix. Sprinkle cheddar cheese over and follow with mozzarella cheese. Bake at 350 degrees F for 30 minutes.

This is such a good recipe. I use any ingredients that I like such as olives, sausage, green peppers etc. Whatever I would order on a real pizza. And it is an easy great way to feed a crowd.

Thanks, Robin
