Buttermilk Corn Meal Muffins
- 2 cups corn meal
- 1 cup flour
- 1/4 cup sugar
- 1 tsp. salt
- 5 tsp. baking powder
- 3 cups buttermilk
- 3 eggs
- 1 cup cooking oil
Mix dry ingredients. Add milk, eggs and oil. Greased muffin tins and fill three-fourths full. Bake at 425 degrees F for 15-20 minutes or until golden brown.

These sound yummy and would be great with homemade chili or soup.
