Ingredients
- 2 cups mini marshmallows
- 2 cups fresh blueberries
- 1 package mixed berry flavored gelatin (3oz.)
- 2 1/2 cups flour
- 1 cup sugar
- 1/2 cup shortening
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1 cup milk
- 1 tsp. vanilla
- 3 eggs
Directions
Grease 9x13 inch baking pan. Space marshmallows evenly across the bottom.combine blueberries and their juice with the dry gelatin in a separate bowl; set aside. Combine remaining ingredients, beat well. Pour batter over marshmallows in pan and spoon berry gelatin mixture over top of batter. Bake in 350 degree F oven for 30 minutes, then reduce heat to 300 degrees F and continue baking 15 minutes. Marshmallows will rise to the top. Makes 12-15 servings.
