Orange Turkey Slices

Ingredients:

  • 1/2 cup grated Parmesan cheese
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2 lb. uncooked turkey breast slices
  • 3 Tbsp. butter or margarine
  • 1 cup julienne carrots
  • 1 cup chicken broth
  • 2 oranges, peeled and cut into 1/4 inch thick slices
  • 3 Tbsp. orange juice
  • Garnish: fresh parsley sprigs

Directions:

Combine cheese, salt, and pepper; dredge turkey slices in mixture. Melt butter in a large nonstick skillet over medium heat; add turkey, and cook 1 to 2 minutes on each side. Place turkey in a lightly grease 9x13 inch pan; set aside. Add carrots and broth to skillet; bring to a boil. Reduce heat, and simmer 5 minutes. Pour carrot mixture over turkey; top with orange slices.. Cover and bake at 350 degrees F for 25 minutes. Add orange juice and bake an additional 5 minutes. Arrange turkey on a serving platter with oranges and carrots, and garnish, if desired.
