Paul's Pumpkin Bars

Ingredients

  • 4 eggs
  • 1 2/3 cups sugar
  • 1 cup vegetable oil
  • 1 15-16 oz. can pumpkin
  • 2 cups flour
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 3-oz package cream cheese
  • 1/2 cup butter
  • 1 tsp. vanilla
  • 2 cups powdered sugar

Directions

In mixer bowl, beat together eggs, sugar, oil, and pumpkin till light and fluffy. Stir together flour, baking powder, cinnamon, salt, and soda. Add to pumpkin mixture and mix thoroughly. Spread batter in ungreased 15x9x1 inch baking pan. Bake at 350 degrees F for 25-30 minutes. Cool. Frost with Cream Cheese Icing. Cut in bars. Makes 24.

Cream Cheese Icing Directions

Cream together butter and cream cheese. Stir in vanilla. Add powdered sugar and mix until smooth.

In the recipe it lists baking powder but it does not list it in the ingredients list. How much baking powder goes into the mix? I used equal 1 tsp. baking powder and baking soda in the recipe. Please add or if it is not included post feedback to omit baking powder when listed in directions.
