Raspberry Pretzel Salad
- 2 1/2 cups coarsely crushed pretzels
- 3 Tbsp. brown sugar
- 3/4 cup melted margarine
- 1 package cream cheese (8 oz.)
- 1 egg
- 1 cup sugar
- 1 drop of lemon extract
- 1 package Cool Whip (4 oz.)
- 2 packages raspberry gelatin (3 oz. size)
- 2 cups hot water
- 2 packages frozen raspberries
Combine crushed pretzels, brown sugar and melted margarine. Put into a 9x13 inch dish and bake at 350 degrees F for 10 minutes. Beat together cream cheese, egg, sugar, lemon extract; fold in Cool Whip. Spread over crust. Mix gelatin, water and frozen raspberries, and when thick, pour over cream cheese mixture. Chill. Can also use frozen strawberries and strawberry gelatin.
