Chicken Curry with Rice
1-1/2 lbs boneless, skinless chicken thighs, quartered
1 onion, chopped
2 cups uncooked long grain rice
2 T curry powder
14-1/2 can chicken broth
Combine all ingredients in slow cooker
Cover and cook on low 8-10 hours or on high 5 hours.

Chicken with Broccoli Rice
1-1/4 cups long grain rice
pepper to taste
2 lbs boneless, skinless chicken breasts, cut into strips
1 pkg Cream of Broccoli dry soup mix
2-1/2 cups chicken broth
Spray slow cooker with non-stick cooking spray. Place rice in cooker, sprinkle with pepper. Top with chicken. Combine soup mix with broth, pour over chicken and rice. Cover and cook on low 6-8 hours.

Spicy Chicken with Rice
1 cup long grain rice
1-1/4 cups chicken broth
1 cup salsa, your choice, mild, medium or hot
4 boneless, skinless chicken breast halves
3/4 cup shredded cheddar cheese
Spray slow cooker with non-stick cooking spray. Put rice in bottom of cooker. Add chicken broth and salsa, stir together. Place chicken breasts on top. Cover and cook 4-6 hours on low. Garnish with cheese before serving.
