Marinated Pineapple

Ingredients

  • 2 fresh pineapples, peeled, cored and cut into bite-sized pieces
  • 1 cup sugar
  • 1/2 cup water
  • 1/2 cup orange juice
  • 1/2 cup lime juice
  • 1 Tbsp. grated orange peel

Directions

Place pineapple in large heatproof bowl. In small saucepan, combine sugar and water. Bring to a boil over high heat, stirring occasionally; cook 1 minute. Stir in orange juice, lime juice, and peel. Pour over pineapple; toss to mix. Refrigerate, covered, 1-2 hours, stirring occasionally. Serve cold with wooden picks. Yield: 6 servings.

Note: Six cups of assorted fresh fruit can be substituted for the pineapple, such as strawberries, grapes and orange segments, etc.
