Salads For Mexican Food Themed Party

We are having a Family Party in Aug. with approximately 40 people including children. I will be serving Mexican food. I have recipes for nearly everything except salads and appetizers. I will NOT be outside grilling nor do I want to heat up the inside of my house with cooking! So I'm looking for recipes that are easy to prepare. (I have an 'ice bath' to keep the food cold). Thank you in advance.

Love the Taco salads-- If you want to be a little more authentic-- google for a napalito salad-- made from cactus pads-- very good-- no kidding....
maube that Mexican food site above?

Taco Salad
4 cups lettuce, cut in bite size pieces
1 cup cheddar cheese, grated
1 large tomato, diced(remove juice & seeds)
4 green onions, sliced
8 oz tortilla chips,crushed, not too fine
&frac; cup mayonnaise
&frac; pack of taco seasoning mix(&frac;x35g)
2 tbs. milk

Put lettuce, cheese,tomato & onion in bowl
Mix the mayo, taco seasoning and milk and add to bowl, stir to mix.
Just before serving stir in the broken tortilla chips. If added too soon they will get soggy, although my daughter prefers it the next day when it is soggy. Enjoy.

I know you ask for salads, but this is easy and no cooking. It is great for partys. I got this recipe from a neighbor who made it for all her Christmas and Swimming pool partys. Everyone always loved it.

SEVEN LAYER MEXICAN DIP

Layer 1-- 2 cans Fritos bean dip
Layer 2-- 4 avocados, mashed
Layer 3-- 8 oz. sour cream
1/2 c. Miracle Whip
1 pkg. 1.5 taco seasoning
Layer 4-- 3 tomatoes, chopped
Layer 5-- 2 bunches green onions, chopped
Layer 6-- 2cups grated cheddar cheese
Layer 7-- 1 can sliced black olives

Spread beans dip in bottom of a pretty serving platter. Next, spread avocados. Mix sour cream, Miracle Whip or mayonnaise, and taco seasoning; spread. Sprinkle tomatoes on fourth layer. Sprinkle green onion, cheese, and black olives in that order. DONE! Serve with chips.

I know you don't want to heat up the kitchen with cooking but, I think you could have the hamburger part of this recipe already cooked ahead of time then, add to recipe later. Hope this helps .. this salad is quite popular with my guests.

Taco Salad

1 pound ground beef
1 pkg. Taco seasoning
1 to 2 tomatoes, chopped
1 8oz. bottle Catalina dressing
1 head iceberg lettuce
1 small onion, chopped
1 large can olives, sliced
1 bag (8 ounces) shredded cheddar cheese
1 bag Nacho Cheese flavored Doritos, crushed

Brown the meat, drain off oil. Add taco seasoning, cook according to package and set aside.

Tear the lettuce into pieces and put into a large bowl. Add the tomato, onion, olives and cheese. Mix well. Add the meat and mix again. Pour the entire bottle of dressing over and toss to coat. Refrigerate.

Just before serving, stir in crushed chips.

I am not really a 'bean' person but I love this salad. There are a million variations but to give you a basic idea try this link:

It usually consists of:
black bean
corn
red pepper
onion
plus spices and the dressing

I have also on occaision added one or more of the following:

olives
garbanzo beans
pasta
celery
avocado, diced
cheese, small dice

For the dressing I usually use a mix of salsa + vinaigrette dressing.

I usually just wing it with what veggies etc I have in the fridge to use up.

Since you will be making a bigger batch it would cheaper to cook your own beans instead of canned perhaps..in a crockpot if you have one to not heat up your kitchen.

It is quick and easy to make, can be made ahead and won't heat up the kitchen.
