Ingredients:

  • 4 oz cream cheese, softened
  • 2 green onions, finely chopped
  • 3 Tbsp. ‘hot' salsa (not heated ;-)
  • 2 oz Cheddar cheese, shredded
  • 4 (10 inch) flour tortillas

Directions:

In a medium bowl, mix together the cream cheese, green onions, salsa and Cheddar cheese.

Spread the cream cheese mixture in even portions on the tortillas. Roll the tortillas and refrigerate in plastic wrap because they cut better once 'firmed up'. After an hour or two, slice into 1 inch long pieces and serve.

When ready to serve cut each roll into 1 to 2 inch pieces, if serving as an appetizer, or simply eat whole ;-)

This is hot! In a skillet, cook the sausage over medium-high heat, stirring, until browned and the fat is rendered, about 4 minutes. Add the onions, garlic, essence, and chili powder, and cook, stirring, until the onions are soft.
