I am looking to start a topic for those of us that get food each month from the Angel Food Ministries. I would like to know what you have made from your Angel Food groceries.

Example, I used some of my boneless chicken breast and the frozen peas and carrots to make a yummy homemade Chicken Pot pie. I cooked the breaded Beef Fritters and Field Peas another night and fried potatoes w/them as well.

If someone has an idea as to how they will use this months food as well, I would like to know!

I felt that way for a long time too. Then I started taking Dave Ramseys finanical peace university "live like no one else so later you can live like no one else". So I tried it again after many years. They have sooo much more now and it's precisely because more and more people are using it creating better quality and variety in what they are able to offer. You wouldn't be taking away from anyone, you are still supporting the growers/providers of the food as well as an awesome program and getting a deal on a bill that is the most flexible every month. Nothing wrong with that rich,poor, middle class or whatever.

I use it in my spaghetti sauce instead of hamburger. I also like to add it to my scrambled eggs, or quiche, or even as a pizza topping for a homemade pizza. hth

For the country fried steaks, what I did is I heated them up in a skillet with just a little oil then I made a brown onion gravy with some dehydrated onions and a brown gravy mix, poured it over the top once the steaks were done and had a quick and easy salsbury steak type of thing with a side of mashed taters. Then the next day I heated up what I hadn't used in my toaster oven and turned them into sandwiches (without gravy). hth

Several months ago they had coated chicken pieces. I used about 1/2 of the bag in a chicken soup recipe and it turned out great! The coating was just enough to thicken the broth. The soup disappeared very quickly. My grand daughters loved it!

Hi everyone. I just joined this forum and I think it's great. I wish I had known about it sooner. Most of the items received from AFM do not have nutritional information or guidelines regarding cooking method, times, etc. So this is the place we can all share ideas, challenges and solutions.

I would just like to say, in response to many that I have seen here, that AFM is NOT for poor families or families that cannot afford food. Obviously, the food costs us money, albeit (for the most part) less than what we would ordinarily pay at the grocery store. I do not wish to speak for AFM, but I believe their mission is to provide everyone with affordable and nutritious food. I also feel that, since many people save money, they would like to see packages purchased for someone (or family) other than your own that you know could benefit from the packages.

But please do not feel guilty or, worse, embarrassed that you utilize this wonderful opportunity. There have been many times that the AFM packages are the only food that we have had here. Other times I have been able to purchase packages for others. Every month, though, I have given away some of the food. Nothing goes to waste. AFM is a blessing. Like a stone tossed into a pond, its ripples extend far beyond our homes, churches and even communities. That is the greater blessing.

The January 2009 box included manicotti and ground turkey. I sauteed the ground turkey with onions and bell peppers, salt and pepper. I then added a jar of pasta sauce. I spread some of the sauce in a casserole dish, added the manicotti on top, and then another layer of sauce on top. I baked it until the manicotti was heated through. It was delicious and really stretched the manicotti!

Angel Food Ministries is NOT only for those in financial harships. On their web site, it states something to the effect, if you eat you qualify. It doesn't check for financial harships, etc. Anyone can qualify. Those on food stamps can use it and those who make lots of money as well. It really helps save on the budget for food

I added a can of nibblet corn to the Corn muffin mix along with package ingredients. Baked as suggested and got yummy muffins. The corn make them sweet and I loved the texture the corn added.

How do you use the turkey sausage? I was stumped and finally gave it to a friend. Thanks for any suggesstions

I haven't used AF myself but for maybe 4 months and it is a wonderful program. We have bought the regular box and the senior meals too. I thought you had to be low income to use the program too (maybe that was years ago as now they are in my area) but as long as you have the money to buy a box you can use the program.

Isn't it a food program to help family's that are having financial hardships? I have heard wonderful things about this organization. It is sad though, I did meet one family that used this program that really did not need to. They had plenty of $$ to go out to eat at expensive places. However, I am glad there are places like this that provide those less fortunate at this time in our economy with food. Thank you.

You know, I am totally loving getting this food. With the rising costs in fuel here lately and the increase in grocery costs that follow, these boxes, and especially the meat specials are saving our family alot of money. If you haven't checked out AFM, you should! It really helps! I am spending WAY less at the grocery store these days and mostly it's for produce and dairy - lately the boxes have even been having eggs and milk and the last two months, they have been offering a produce and fruit box too! Really, check it out - this is not a charity ... it's almost like a co-op.

I use the chicken quarters and the rice to make a yummy herbed chicken and rice. First I cook the rice and then put it in a casserole dish. I add a table spoon of oil and add lots of French Herb seasoning rub blend (add the amount you prefer). I then rub the thawed chicken quarters with the same seasoning and put them on top of the rice. Then I add a few pats of margarine to the dish and cover. I bake it on 400 for 45 minutes and it makes a delicious meal. Then I add a veggie or a salad.

I am new to AFM and must say jaltman on 6/23 I tried your recipe and it was delicious. I also added in some of the carrots that I received in my September box.

This month we recieved pork loin chops and I found a recipe for chops topped with a can of manderin oranges, cloves and pepper. You cook your chops in a skillet with oil until they're brown and then add a can of manderin oranges, a half teaspoon of cloves and some pepper and let them simmer for about 20-25 minutes until all the juice runs clear. My kids love manderin oranges and they are in expensive and a staple in our house.

Easy Sweet N Sour Chicken using Angel Food Ministries Chicken Fritters

Green & Red Peppers cut in bite size pieces
Firm tomatoes cut into bite size pieces (optional)
1/2 c. brown sugar
1 15 oz can pineapple chunks with juice
1/3 c. vinegar
1 tbsp soy sauce
1 tbsp cornstarch

Bake Chicken Fritters in oven according to directions. Mix brown sugar and cornstarch in non-stick pan. Stir in pineapple with juice, vinegar, and soy sauce. Heat to boiling, stirring constantly. Reduce heat, simmer stirring occasionally for about five minutes. Stir in peppers and tomatoes. Just before serving stir in the Chicken and coat all. Serve over brown or white rice or ramen noodles.

Note: this dish is Pretty as a picture, and delicious enough for company! Enjoy!

The fajita chicken from July's Angel Food was useful for many dishes. I cooked it in a large frying pan in olive oil and some sliced up onions. When it was almost done I threw in sliced mushrooms. This combo was the basis for a few different meals. The first night we threw it in flour tortillas with some Mexican cheese mix and some Spanish rice. I also used it in a wrap with romaine lettuce, mozzarella cheese, and Ceasar dressing. It is also good with pasta and sauce of your choice.

I just started getting groceries from Angel Food ministries last month. What a great deal. Some of the items didn't have cooking directions on them so I'm glad to see the recipes. I will be checking back here often and contributing. The popcorn chicken was so good, but I wasn't sure how to cook it. I baked it. I didn't want to deep fry it like the directions that were on the back. This month I'm getting the main pack and all 3 add-ons.

Sweedish Meatballs
I used this recipe for the meatballs we received last month, I think.

1 c. beef broth
1 T flour (or 2 t. cornstartch)
1 c Sour Cream
1/4 t nutmeg

Mix flour and broth, bring to a boil. Add thawed meatballs, reduce heat to low; cover and simmer until heated through and sauce is thickened. Stir in sour cream and nutmeg. Serve over hot cooked rice.

I served along side some green beans too.

An easier/similiar version would be to use cream of mushroom soup.

BBQ Pinto Beans and Ribs
I am not a big 'bean' eater, and have been trying to find a way to
use the Pinto Beans we so frequently get in our food order. So the
other night I made them in teh crockpot with the St. Louis
Ribs...yummy!

Here is the recipe:
1lb dried pinto beans
3 cups water
1 onion, chopped
180z bottle of BBQ sauce
1/4c molasses (I used 1/4 c brown sugar)
1/4 t pepper

Sort beans, rinse and drain. Combine all ingredients in 3-4at
crockpot. Cover crockpot and cook on low for 8-9hrs or until beans
are tender. 6-8 servings.

In addition, I seasoned the ribs with salt, pepper and BBQ seasoning
and threw them in too. Next time I will wait about 2hrs b/c they
were so tender they fell of the bones.

I served them up with Extra BBQ sauce and Cornbread. it was very good!

I've made several different things -

I use the kraftfoods.com recipes to find different meal ideas, as well as someother online recipe groups. Here are a few I have tried recently and liked.

Sweet and Sour Meatball Simmer
3/4 lb. (3/4 of 16-oz. pkg.) frozen prepared meatballs
1 medium each: red and yellow pepper, cut into chunks
1/4 cup water
1/4 cup apricot jam
1/4 cup KRAFT CATALINA Dressing
2 Tbsp. soy sauce
3/4 tsp. each: ground ginger and garlic powder
3 cups hot cooked instant white rice
COMBINE all ingredients except rice in large skillet; cover. Cook on medium heat 10 min., stirring occasionally.
INCREASE heat to medium-high; uncover. Cook 8 to 10 min., or until sauce is thickened and meatballs are heated through, stirring occasionally.
SERVE over the hot cooked rice.

And for the popcorn chicken, I made sweet and sour chicken with fried rice
1 medium sweet red pepper, cut into 1 inch pieces
1 small onion, thinly sliced
1 tablespoon vegetable oil
1 (20 ounce) can pineapple chunks in juice
3 tablespoons white vinegar
2 tablespoons low sodium soy sauce
2 tablespoons ketchup
1/3 cup packed brown sugar
2 tablespoons cornstarch
1 (12 ounce) package popcorn chicken
In a large skillet or wok, heat oil. Stir-fry pepper and onion for 3-4 minutes or until crisp-tender.
Drain pineapple, reserving juice in a 2-cup measuring cup; set pineapple aside. Add enough water to the juice to make 1 1/3 cups. Stir in the vinegar, soy sauce and ketchup.
In a bowl, combine brown sugar and cornstarch. Stir in pineapple juice mixture and mix until smooth. Gradually add to skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Add pineapple. Reduce heat and simmer, uncovered, for 4-5 minutes or until heated through.
Meanwhile, microwave chicken according to package instructions (I fried the chicken according to the package directions). Stir into pineapple mixture. Serve immediately.

*I use the frozen pepper stir fry mix to substitute for the pepper and onion, and do so for most recipes that call for peppers.

This week I plan to try the Crockpot Honey Chicken and Dried Fruit from the link left by Janna Kelley on 6/8.
As well as this recipe (using the thighs and mixed veg) (from kraftfoods.com):
Creamy Chicken Pasta Toss
Prep Time: 10 min
Total Time: 35 min
Makes: 4 servings, 2 cups each
1 tsp. oil
1 lb. boneless skinless chicken thighs, cut into bite-size pieces
2 cups milk
1/4 cup PHILADELPHIA Cream Cheese Spread
3 cups rotini or fusilli pasta, uncooked
2 cups frozen mixed vegetables
1 cup KRAFT Shredded Cheddar Cheese
HEAT oil in large nonstick skillet on medium-high heat. Add chicken; cook 7 min. or until evenly browned, stirring occasionally.
ADD milk and cream cheese spread; mix well. Bring to boil. Stir in pasta; cover. Reduce heat to medium-low.
COOK 10 min. or until pasta is tender and chicken is cooked through. Add vegetables; cook 5 min. or until heated through. Sprinkle with the cheese.

I take the Popcorn Chicken cook them till done,either deep fry or oven .Then I spread them on a foil lined baking pan , pour a cup of Asian season sauce or barbecue sauce to coat over all . Put in 450 degree oven for 15 - 20 min. It's not Hot wings but very good & simple , kids loved it with salad & ranch dressing.

Boneless Skinless Chicken breast

Take them and either put them in a crock pot and pour cream of chicken soup over them and a can of chicken broth and let cook, it tastes great over mashed potatoes or noodles.

Or you can cook them in the oven also, the same way.. We love them.

Here is a great recipe for the pork roast.

Pork Roast

2 pound boneless pork roast
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon sage
1 teaspoon thyme
2 tablespoons vegetable oil
2 cups chopped onion
4 cloves garlic minced
1 cup apple cider

Mix the salt, pepper, sage and thyme together and rub over the surface of the pork roast. Let it sit overnight or a minimum of 2 hours in the refrigerator. Heat the vegetable oil in a skillet and brown the roast on all sides. Remove the roast to a baking dish. Sauté the onions and garlic in the oil until the onions are limp. Add the apple juice and bring to a boil. Pour over the Pork Roast and cover the baking dish. Bake at 325 degrees for 2 hours. When done, remove the roast and let it "rest" covered with foil for 10 minutes before slicing. Pour the drippings from pan into a blender or food processor and blend until smooth. Reheat and pour over the sliced pork.

On Aprils menu we will be getting meatballs I like to fix meatball subs with them . 1 package of meatballs 1 can of pasta sauce (I perfer hunts meat sauce) pour sauce over meatballs and heat . I buy the hogie buns and sliced cheese. They are really good ! About 4 meatballs will fit on 1 hogie , to give you an idea of how many it will serve.

I wonder if all the locations end up with the same substitutions each month. When I try to pick out recipes in advance, I end up with different items.

I just picked up my order today and have Pillsbury Garlic Rolls instead corn muffin mix but the rolls look great!

Hello everyone, just wanted to say this is awesome. My fiancé and I are the host site directors for AFM in Lake Milton, Ohio, our first month w/ AFM was April of 2005. About 2 or 3 months after that we saw there were a couple items on the next menu and some of us were just at a loss how to cook them. So some of us ladies got together and now we offer recipes on distribution day, printed out each month for certain items on the menu. So imagine my surprise when I received this link in my email.
Well after having said all that I really should include a recipe, lol.

CHEESE & BACON CORNBREAD
Ingredients:
1 package corn muffin mix (i.e., Jiffy)
1/2 C grated sharp ched. cheese
6 slices crisply cooked & crumbled bacon
1 egg
milk, as label directs

Directions:
Empty corn muffin mix into a medium mixing bowl. Save about 1 T of shr. cheese & bacon for topping; stir remaining cheese & bacon into muffin mix. Mis in egg & milk, following label directions. Pour batter into a greased & floured 8-inch square baking dish. Bake at 400 for 15 minutes; sprinkle reserved cheese & bacon over top & bake 10 minutes longer, or until cornbread browned & firm.

Saturday night I made two of the breaded chicken breasts in the toaster oven. I deep fried the shoestring fries. I served the chicken with sides of hot wing sauce and ranch for dipping. Tonight I made philly cheesesteaks. I toasted hamburger buns. I sliced some mozzarella cheese and sauteed onions in butter with salt and pepper. I cooked the steaks and piled the meat on the buns, topped with the cheese and onions. Good football watching food.

I have to go through my recipes when I have some free time (ha), but here's a couple ideas to start.

Greek chicken leg quarters with couscous: Rub chicken legs with olive oil, sprinkle with Greek seasoning (or mix of rosemary, oregano, salt, pepper) and chopped garlic. Bake or saute until cooked through. Serve with couscous prepared with chicken broth.

Easy Beef Stroganoff: Brown 1/4 to 1/2 lb ground beef with onion flakes, Spike (a vegetable based seasoning). Mix in one can cream of mushroom soup and 1/4 cup water. Add 1/2 packet brown gravy mix and 1/3 cup sour cream. Serve over cooked noodles or rice.

I'm going to make cheesy pigs in a blanket with the hot dogs.

Cream of broccoli soup: Mix one can chicken broth, one can cream of mushroom soup, one block of cream cheese and the bag of frozen broccoli. Heat and season to taste. You could also use cheese, celery or broccoli soup.

I'll post more ideas as I think of them.

We get a lot of chicken and one way I use chicken thighs is to make a marinade of one small bottle of french dressing and one cup of whole berry cranberry sauce. Two tbls of dry onion flakes or dry onion soup mix. Combine all three and pour over chiken and rerigerate 3-4 hours or longer. Bake covered at 350 degrees for one hour. I use my slow cooker until chiken is tender. I also remove the skin from the chicken befor it is marinaded.
