Potato Crust Pizza

A different way to make 'pizza.' I enjoy this, because I actually am not a big bread person. I have been known many times to eat the topping off regular pizza and leave the crust.

Ingredients:

  • 1 box scalloped potatoes
  • 1 (14 oz.) can tomato puree
  • 1 1/2 cups water
  • 1 tsp. Italian seasoning
  • 1 lb. lean ground beef
  • 1 (4 oz.) pkg. sliced pepperoni
  • 8 oz. mozzarella cheese, shredded

Directions:

Arrange potatoes in 10x10 inch baking dish, and sprinkle with sauce mix. Combine tomato puree, water, and Italian seasoning in saucepan, and mix well. Bring to a boil. Pour over potatoes. Brown ground chuck in skillet, stirring until crumbly; drain. Spoon over tomato sauce. Layer with pepperoni slices, and sprinkle with cheese. Bake for 30-35 minutes at 400 degrees F.

Cooking Time: 30-35 Minutes
