Prepare a scalloped or other prepackaged potato in a casserole as directed. Add a can of drained tuna. You can extend this even farther by adding canned mixed veggies or a single vegetable and even add leftover potato chips. A little bit of potato topper sour cream is nice too. Salt and pepper or season salt. Bake 25 minutes to 1/2 hour total time.
Very filling and tasty, one of my favorite "comfort foods".
