Hoe Down Casserole

Ingredients

  • 2 packages frozen baby okra (10 oz. each)
  • 1 can tomatoes (28 oz.)
  • 1 can corn (12 oz.)
  • 1 sliced onion
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 can Spam or Treet, sliced into patties
  • 1 package corn bread mix (10 oz.)

Directions

Combine okra, tomatoes, corn, onion, salt and pepper into well greased casserole dish. Arrange Spam in patties on top of vegetables. Prepare corn bread mix. Spoon batter along outside edge of casserole. Bake uncovered at 425 degrees F for 20-25 minutes.
