Garlic Parslied Potatoes
- 3 lb. medium sized red potatoes, unpeeled and sliced 1/4 inch thick
- 1/4 cup olive oil
- 6 garlic cloves, pressed
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 2 Tbsp. chopped fresh parsley, divided
Preheat oven to 350 degrees F. In large bowl, combine potatoes, oil, garlic, salt and pepper; toss until well coated. Layer half of potato mixture in greased 9x13 inch baking dish; sprinkle with 1 Tbsp. of the parsley. Top with remaining potato mixture. Cover; bake 45 minutes or until potatoes are tender. Sprinkle with remaining 1 Tbsp. parsley before serving.
