Chicken Strata

Ingredients

  • 8 slices day old bread
  • 2 cups diced cooked chicken or turkey
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1/2 cup finely chopped celery
  • 1/2 cup mayonnaise
  • 3/4 tsp. salt
  • dash pepper
  • 2 slightly beaten eggs
  • 1 1/2 cup milk
  • 1 can cream of mushroom soup

Directions

Butter 2 slices bread, cut in 1/2 inch cubes and set aside. Cut remaining bread in 1 inch cubes and place half in bottom of 8x8 inch baking dish. Combine next 7 ingredients in a bowl. Spoon over bread cubes. Sprinkle remaining unbuttered bread cubes over chicken mixture. Combine the eggs and milk in bowl. Pour over all. Cover and chill 1 hour or overnight. Preheat oven to 325 degrees F. Spoon the white sauce on top. Sprinkle with buttered cubes. Bake 50 minutes or until set.

Chicken Strata

Good, hearty meal for cool weather, which we will be having here in Iowa before we know it!

Ingredients:

  • 24 slices white bread (slightly dried in oven)
  • 8 cups diced cooked chicken
  • 2 cups mayonnaise
  • 2 cups finely chopped celery
  • 2 cups finely chopped onion
  • 1 cup finely chopped green pepper
  • 1/4 tsp. pepper
  • 1 Tbsp. salt
  • 6 eggs, slightly beaten
  • 6 cups milk
  • 4 cans cream of mushroom soup
  • 2 cups shredded cheese

Directions:

Butter 8 slices of the bread and cut in 1 inch cubes. Cut remaining bread in 1 inch cubes and place 1/2 of them in bottom of two 9x13 inch pans. Mix the next seven ingredients and spoon over bread cubes in pans. Sprinkle the remaining un-buttered bread cubes over the chicken mixture in pans.

Mix the eggs and milk and pour over all. Cover and chill 1 hour or overnight. Spoon soup over top and cover with the remaining buttered bread cubes. Sprinkle shredded cheese over top. Bake at 325 degrees F for 50-60 minutes.

Directions

Butter a 7x12 inch baking dish. Place 1/2 bread in dish. Combine chicken, onion, green pepper, celery, mayonnaise, salt and pepper. Pour over bread. Top with rest of bread. Beat eggs and milk and pour over mixture. Spoon can of soup over all. Bake at 350 degrees F for 45 minutes. Sprinkle cheese on top and bake for 15 minutes longer. Note: Can also use turkey instead of chicken.
