Vegetarian Lentil and Nut Loaf

Ingredients

  • 1 cup nuts
  • 1 medium onion, peeled and chopped
  • 2 cups cooked lentils
  • 2 beaten eggs
  • 1 cup evaporated milk
  • 1 1/2 cups whole wheat bread crumbs
  • 1/2 tsp. sage
  • 1/4 cup oil

Directions

Grind nuts in a blender and place them in a large mixing bowl. Put onion and eggs in blender and blend until onion is very finely chopped. Add remaining ingredients and mix well. Pour into a greased loaf pan and bake at 350 degrees F for one hour. Serves 6.

hello. i have a question that might seem stupid to your americans bu as english is not my naive tongue and i am in europe i am not sure wha1 1 cup evaporated milk is-never heard of evaporated milk. could you be so kind and let me know to kjana AT hotmail.com or here? many thanks! jana

Editor's Note: Hello Jana,
Evaporated milk here in the states is a kind of milk that comes in a can. About half of the water has been evaporated out of it. I'm not sure if there is an equivalent in Europe. You could use fresh milk and add a little cream to it as a substitute.
