I had a recipe for peanut butter cookies, that only used 3 things to make them. I have misplaced it and was wondering if anyone would happen to know what it is. I believe it used 1 cup sugar, 1 cup peanut butter, but I can not remember what the 3rd thing was. Also, my husband is diabetic, could I replace the sugar with Splenda? Thank you in advance.
Make balls (I use a melon scoop so they are the same size), criss cross, bake at 350 for about 8 minutes. Let cool 2 minutes before removing from sheet. Ungreased cookie sheet!
The recipe I have says to add 1 tsp vanilla also. Emeril makes them with chocolate chips. I have made them with regular splenda. They weren't as good as with sugar but were edible.
Don't use regular Splenda for this recipe, use Splenda for baking. I baked these using regular Splenda. I had to throw them away because they were terrible. I called the company and was told to use the Splenda for baking when baking cookies. I never did try the Splenda for baking because of the expense. I used regular sugar and they were great.

In a mixing bowl, combine all ingredients together. Preheat oven to 350 degrees F. Using a tablespoon, dip out and roll dough into balls. Place on ungreased cookie sheet about 1 inch apart.

Ingredients
1- 15 ounce jar of peanut butter (crunchy, creamy or natural)
1 cup granulated sugar
1 egg
You will also need a small bowl of water
Directions
In a mixing bowl, combine all ingredients together. Preheat oven to 350 degrees F. Using a tablespoon, dip out and roll dough into balls. Place on ungreased cookie sheet about 1 inch apart.
Dip a fork into the water press the dough down gently and make traditional criss-cross patterns. Bake about 5 minutes. Remove from oven and allow to cool completely. Cookies finish baking while cooling.

I have made the conventional peanut butter cookies for years, but my daughter found this three ingredient recipe and swears that the cookies have a stronger peanut butter flavor and if uncooked by a minute or two they turn out chewy. (08/18/2008)
